Vegan Pancakes (with maple syrup)

Hi there and welcome to my blog!
Today I'm gonna show you how to prepare some delicious vegan pancakes; the recipe is quite simple, as every other pancake recipe actually. The only difference is that I replaced eggs with flax seeds.


Ingredients (for about 10 pancakes):
150g flour
180g vegetal milk
30g sugar cane
1 spoon rice malt
1 spoon flax seeds
1/2 teaspoon bicarbonate of soda
1 teaspoon olive oil



Take the flax seeds and add 3 spoons of warm water, let them rest 10/15 minutes and they will start to realese a gel, which is what we need in order to get the same viscosity of the eggs; then put it all in the mixer with just a little of milk and oil, to make it easier to break the seeds. You'll get a thick and sticky compound.
Now you can take all the other ingredients and mix it together!
(I've also added just a little of cinnamon because I love its sweet flavour)


  


If once you've done you think it's not liquid enough, you can add some more milk, until you'll get it as fluid as you like, that's up to you.

This is how my pancake batter looked like in the end:


Ok now time to cook! Put a few drops of oil into a nonstick pan and once it's hot pour some of the batter. You know it' time to turn the pancake when many little cute bubbles start to appear on its surface.



When the pancakes are ready, you can flavour them with anything you like, personally I use maple syrup, I think it's totally the best! But you can also use chocolate cream, jam, peanut butter or even ice cream if you like.
